5 ingredients + optional | 45 minutes prepping/cooking | roughly 8 portions
I like bananas still green. But as I discovered through trial and error they taste of nothing in banana bread, for that you need to leave them hanging around for about 3 days until they look kind of like this:
- 200g self raising flour
- 100g butter
- 50g caster sugar
- 2 eggs
- 2 overripe bananas
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 tablespoons runny honey
- 2 tablespoons OJ
- 1 teaspoon vanilla essence
Mix together all the ingredients except the bananas.
Mash the bananas separately then stir loosely into the mix.
Scoop into a greased loaf tin and put into the oven for 40 minutes at 170 degrees.
